Himalayan food is a unique cuisine that covers all the mountainous borders. Thukpa soup is very popular in the Sikkim region. Their local staple dishes are a combination of Chinese, Indian, Nepalese and Tibetan cuisine. They equally enjoy Indian curries and the Samosa.
The very thought of Himalayan Thupka sets your mouth drooling.
Ingredients:
- 3 cups chicken shred
- 2 cups cooked rice noodles
- 1/2 cup julienned carrots
- 1/2 cup French beans
- 1/2 cup shredded cabbage,
- 1/2 cup capsicum
- 1 tsp ginger paste
- 1 tsp garlic paste
- Fiery red hot chillies to taste( I don't use them)
- 6 cups chicken broth
- 1/2 tsp crushed black pepper
(You can retain the water in which you boiled chicken for shredding)
The original recipe uses fiery red peppers
I prefer green chillies(de-seeded)
Cooking instructions:
- In a pan measure 5-6 cups of broth
- To this add ginger garlic and chillies
- Add all the julienned vegetables
- Add chicken shreds and boiled noodles
- Season with salt and pepper
- Remove from the hot plate
- Serve piping hot
