Fusion foods...


 

I hope too much fusion.... Doesn't lead to confusion. 


 A brief :

Food plays an important part in our lives. Over
 the past few years food has undergone a transition with a blend of flavours, cooking style, and  ingredients. food sees a change as it moves within the region. 

How history impacted the journey of food within the country. 

The Europeans moved all over the world and started colonisation. Changes  were brought in every aspect of life. 

Changes could be seen in the farming of land,  the way natives lived,  in trade,  warfare,  hunting and personal property, and of course food. 

Besides Europeans,  India saw the evolution of Persian Culture on food , the Mangolean culture with its dominant Tandoori or the clay oven for roasting meats, making flat breads... Tandoori Roti,Naans,Roomali Rotis.

Now Indian food has carved a niche for itself in
the whole world. 

Mixing culinary style of various regional culture across the Indian sub continent is interesting and I often try my hand at it.  South Indian Cuisine, the favourite's Dosa,idli and Sambar, have witnessed a metamorphosis not only in India but across the seas.  

I like it fusion flavours, variety they say is the spice of life. 

Sharing my favorite fusion recipe,  easy to cook and won't leave a mess in the work space. 


Kacchoris stuffed with cheese spiced up with mustard sauce (a must try)

Ingredients :
  •  2 cups refined flour
  • 1/2. Cup oil/ghee
  • salt to taste

Filling :
  • 250gms paneer
  • 100gms processed cheese
  • Salt and pepper 
  • 2 tsp mustard sauce

Dough:
  • In a big bowl add flour 
  • Salt and oil 
  • and rub between the palms till crumbly,  
  • knead into a firm dough and let it rest for 20minutes.

How to prepare the filling :
  • In a pan crumble the paneer
  • Add the processed cheese
  • mustard  sauce
  • Adjust the salt as per taste
  • Cool 
How to make kacchoris :

  • Divide the dough into even mid sized balls
  • Flatten and fill it up with the paneer mixture, 
  • bring the sides into the center and close. 
  • Keep under a damp cloth till all are done 
  • Fry in medium hot oil till golden 
Or
  • Grease a baking tray
  • Arrange the kacchoris 
  • Lightly brush with oil
  • And bake in a pre- heated oven at 180deg
  • For  25minutes or till done 
Keema samosa :




Keema samosa :

This has been my childhood favorite, and come what may, it was always been a  part of Christmas goodies my mother made. I often helped, her make ,so I  naturally grew up knowing how to do it. 

Dough:
  • 2 cups of refined flour
  • 1/2 cup ghee
  • 1 tsp salt. 

  • Mix all ingredients till flour is crumbly,  knead into a semi soft dough. 
  • Cover and rest for 30minutes 

Keema  filling :
  • 250gms mince
  • 2tsp  ginger and garlic crushed 
  • 1 large Onion finely chopped 
  • oil to fry 

To prepare filling :
  • In a pan fry onions 
  • Add the mince, to this add ginger garlic paste 
  • Add salt, garam masala, chilli powder as per your taste
  • Keep stir frying till done 
  • Cool

Making Samosa :
  • take a ball of kneaded flour
  • roll out in a thin flat circle 
  • Cut into half and make a cone
  • Put in the filling 
  • Seal mouth of the cone with water 
  • Refrigerate for 30minutes 
  • Fry in medium hot oil till golden. 

Mango ice-cream lassi 


ingredients :

  • Mango ice cream 
  • curd or lassi
  • Sugar to taste 
How to make 
  • In a tall glass add lassi
  • and then one scoop ice-cream
  • Keep repeating till the top of the glass 
  • Garnish with fresh cream ,mango bits
  • Serve chilled

Spicytreats with leftovers

2020 changed the world. Covid, pandemic and lockdown for almost over two months found people confined to their homes. It was a year of uncertainty ...

Work from home became the new culture. Students were attending online classes. Every one was at home. People started stocking up vegetables, filling kitchen cabinets with grocery.

So much food was being cooked and leftovers started finding its way into the fridge....seeing the food sitting on the fridge shelves, set me to work. I wasn't going to throw away all that good food. So I began experimenting with combining them to make delicious and healthy new dishes. 

I always found chapatis in the container.so one day I thought I would use them to make a dessert.

I remember my grandmother would break up the chapati into bits,mix ghee and sugar and we relished it. In fact every indian home has tasted Chapati Churma.


Chapati Churma

You will need:
  • Leftover chapatis
  • Some pure ghee
  • Grated jaggery or bura
  • Cardamom powder
  • Cashewnuts and coconut chips for garnish
How it's done:
In a mixer grinder put in all the ingredients except nuts . Grind till everything is fine crumble 
Dish out and garnish with nuts.

 This is a hot favorite in our home, you can try it with your variation. I am sharing my version.

You will need:
  • Leftover chapatis
  • Green coriander chutney/Mayonnaise
  • Shredded chicken/cottage cheese/
  • Shredded cabbage, carrots, capsicum
  • Tomato sauce/Schezwan Chutney
How it's done
  • On a hot griddle warm up the chapati
  • Spread coriander chutney/mayonnaise
  • Then over that some shredded and lightly 
  • Sauteed vegetables
  • Lastly shredded chicken/cottage cheese
  • Roll and serve.
Kebabs





Kebabs originally belong to Turkey, it found its way to North India and became a delicacy .it is usually made of minced meat and gram dal, and spices. but over the years so many varieties of kebabs have been added. Today I am sharing my favorite recipe of kebabs where I have used leftover rice, some boiled potatoes, and leftover black gram.

You will need:
  •  1 cup Leftover rice
  • 2 or 3 boiled potatoes grated finely
  • 2 cups of black gram (leftover)
  • Onion finely chopped
  • Green chilies and freshly cut coriander
  • Ginger garlic paste
  • Garam masala a generous pinch
  • Salt and pepper to taste
  • Breadcrumbs 
How it's done:
  • In a mixer grinder
  • Add all the ingredients
  • Pulse till it's properly mashed
  • Remove into a plate
  • Grease the palms of your hands and shape them into kebabs.
  • Shallow fry on a hot griddle.
