Creamy chicken casserole
I had some boiled chicken in the fridge which I had saved to make a sandwich filling.
I had been putting it off quite a while , but I am not in favour of keeping food in the fridge for more than two or three days
I thought of baking it. So I made a creamy roux with butter, corn flour and threw in some herbs and poured it over the chicken breast and grated
a generous amount of cheese over it, sprinkled some breadcrumbs and a dash of herbs,and seasoning , popped it in the oven and baked it for 20 minutes in a preheated oven at 180 degrees.
Dinner that night was enjoyed with everyone contributing their ideas to make It better.
I found it very delicious and decided to work on improving it. After a few trials I am now sharing my version of the creamy chicken casserole.
Ingredients
- Chicken breasts and thighs
- 1 packet knorr chicken soup
- Herbs of your choice
- Chilly flakes
- Garlic crushed ( 10-15flakes)
- Baby potatoes boiled
- Butter
- Pasta/ boiled rice/ noodles
- Mushrooms (optional)
Directions.
- In a large pan add butter and 1 tsp oil
- Put in crushed garlic and saute
- Add chicken breasts and fry it till the colour changes.
- Remove on a baking tray and arrange boiled potatoes and mushrooms around it.
- Pour hot knorr soup over it and season with salt and pepper.
- Finally some chilly flakes and herbs
- Now sprinkle bread crumbs and over this grate cheese.
- Bake in a preheated oven at 180degrees for 20_25 minutes or a golden crust forms on it..
- Serve piping hot.
Note Empty Contents of knorr chicken in a saucepan and boil it in two cups of water.
